| Abstract | The invention relates to a process for the manufacture of an alkali metal or alkaline earth metal salt of L-ascorbic acid 2-monophosphate of formula I. The said process comprising reacting with a concentrated aqueous solution of anm alkali metal or alkaline earth metal salt of L-ascorbic acid of formula III, in the presence of an alkaline earth metal hydroxide as a base, a L-ascorbic acid 2-polyphosphate of formula II. The said compound of formula II preferably being produced in situ by adding to the compound of formula III a phosphorylating agent. The pH of the reaction medium is in the range of 8 to 11 and after essentially all the added or in situ produced polyphosphate has been consumed in the reaction the L-ascorbic acid 2-monophospate salt of formula I is recovered in a known manner from the mixture. |
