Full Text | FORM 2 THE PATENTS ACT 70 COMPLETE SPECIFICATION (Section 10) (Act 39 of 70) A DEVICE FOR MANUFACTURING CHIKI AND OTHER ALLIED TRADITIONAL ETHNIC INDIAN FOOD PRODUCTS AND A METHOD OF MANUFACTURING SAID PRODUCTS USING THE DEVICE THE FOLLOWING DESCRPTION PARTICULARLY DESCRD3ES THE NATURE OF THE INVENTION AND THE MANNER IN WHICH IT IS TO BE PERFORMED ORIGINAL 177/MUM/05 GRANTED 13-12-2006 Field of the invention: The invention relates to a device for manufacturing traditional ethnic Indian food products and a method of manufacturing said products using the device. This invention particularly relates to a device for manufacturing chiki, sweetmeat and other allied food products and a method of manufacturing such products using the device. The device of the present invention can particularly manufacture large quantities of chikis and other allied food products with different shapes, sizes & thickness under hygienic conditions. The chiki, sweetmeat and other allied food products manufactured using the device of the present invention, has standardized uniform tastes, improved product characteristics and a long shelf life. The chiki, sweetmeat and other allied food products made using the device of the present invention and packed using appropriate packaging techniques, controls various parameters such as colour, size, thickness, mouth feel and crispiness. In other words, the device of the present invention is useful for manufacture of all types of chiki, sweetmeat and other allied food products using various ingredients with combination of different parameters such as colour, size, thickness, taste, mouth feel and crispiness. Background of Invention: There are varieties of chiki made from peanut, sesame, coconut, cashew, pistachio, other nutshell cereals available in the market in different thickness and are inconsistent in uniformity, size, shape, quality as they are manufactured in small quantities with manual operations. The other allied food products are also made from the above ingredients. Traditionally, chiki is made manually, using small utensils, trays and hand rollers. The quality of such manually prepared chiki is inconsistent due to non-uniform processes employed. The methods employed do not have the necessary volumes of production suitable for commercial production. The chiki produced are also non-uniform and inconsistent in quality, taste and appearance. Normally they have also short shelf life and hence have poor marketability. Since chikis are very popular amongst the people as a food, there is a need to improve its quality and capacity of production under hygienic conditions with longer shelf life. Towards the above objectives if a device is developed which will be used for the manufacture of chiki, sweetmeat and other allied food products in large volumes and having uniform qualities such as consistent tastes and uniform appearance it would benefit the industry and the consumers. Recognizing the importance of such a device for achieving the above objectives, we initiated R&D towards that direction. It should be noted that in this application, the invention is described with reference to chiki but it should not be construed to limit the scope of the invention as the invention can be applied to similar allied food products also. Therefore, the main objective of the present invention is to provide a device for the manufacture of chiki, sweetmeat and other allied food products in large volumes for commercial purpose. Another objective of the present invention is to provide a device for the manufacture of chiki, sweetmeat and other allied food products in the desired uniform consistency, appearance, taste and with longer shelf life. Yet another objective of the present invention is to provide a device for the manufacture of chiki, sweetmeat and other allied food products in the desired uniformity in shape, thickness and sizes. Still another objective of the present invention is to provide a device for the manufacture of chiki, sweetmeat and other allied food products that can be carried out with Good Manufacturing Practices (GMP) and untouched by hands so that the products manufactured are hygienic to eat. Another objective of the present invention is to provide a method for manufacturing of chiki, sweetmeat and other allied food products in the desired uniform consistency, appearance and taste longer shelf life, hygienic and in large volumes. This invention has been developed based on our sustained R&D work and the observations that if a device is fabricated and provided with a control mechanism which will, (i) measure the temperature, (ii) adjust the thickness (iii) vary the speed of all conveyor belts & rollers, the resulting final products will satisfy all the above desired requirements. Accordingly we have developed a device for the manufacture of chiki, sweetmeat and other allied food products, the device when used for the manufacture of the said products meets all the above mentioned objectives. The Device of the present invention is shown in Figure 1 of the drawing accompanying this specification which is an isometric view of the device. Figure 2 is a batch cooker provided adjacent to device. Figure 3 is a non-contact hand held type temperature sensor and Figure 4 is control panel. It should be noted that though the device has been shown having two belt conveyors and rollers in the Figure 1, it should be kept in mind that this is an illustration only and other variations are also envisaged within the scope of the present invention. A method of making chiki, sweatmeat and other allied food products using the device wherein the hot material passes through a stainless steel feeding tray (2) to the first guaging roller (3) pressing the material in the form of sheet/slab, which passes through the inclined Conveyor Belt (5) to the thickness guiding unit (7) and second gauging roller (8) to get the sheet / slab of desired thickness of the sheet/slab, a second conveyor belt (10) carrying the sheet/slab to the longitudinal scrolling unit (12) marking cutting impression on the sheet/slab to get desired width and further cutting the sheet / slab with the help of motorized cross cutter (13) to get the desired length and finally collected on the product tray (17). In a preferred embodiment of the invention, the machine main frame (1) may be connected with a batch cooker (18). It may also be provided with a stirrer (19) and a temperature controller (20) to control the temperature of the molten hot mass material. The speed of the motor (4) can be varied depending upon the type of the product by using a variable frequency drive (21) fixed inside the control panel (25). The speed of motor (6) depending upon the type of product thickness can be varied using a variable frequency drive (22) fixed inside the control panel (25). The speed of the motor (11) can be varied by using a variable frequency drive (23) fixed inside the control panel (25) to increase the production capacity. The speed of the motor (14) can also be varied by using a variable frequency drive (24) fixed inside the control panel (25) to cut the sheet / slab to get the desired length. The thickness adjustment unit (9) uses a screw mounted on main frame (1), which is manually adjusted to get the required sheet / slab thickness. In a preferred embodiments the specifications of the various components used in the fabrication of the device may be as follows : A) Feeding Tray (2): The cooked materials which are required for the manufacture of the products such as chiki, sweetmeat or other allied food products are fed to the first gauging roller(3), preferably made of stainless steel, presently through a stainless steel tray (2), mounted on the 1st gauging roller(3) in an inclined position. The first gauging roller(3) driven by the motor (4) varies the thickness of the sheet / slab formed, preferably between 10 to 12 mm, variable frequency drive (21) fixed to motor (4) is used to vary speed of first gauging roller (3) may have preferably capacity of 1.5 horsepower and the gear box ratio of 10:1. The length of the first gauging roller (3) may preferably be 310 mm and made of stainless steel 304-grade material of construction. B) Thickness Guiding Unit (7): This unit may preferably be made of stainless steel with Nylon sleeve on two ends, and driven by the friction of the inclined conveyor belt (5). C) Conveyor Belt (5): The belt used is a PVC food grade washable belt. Variable frequency drive (22) fixed to motor (6) is used to vary speed of inclined conveyor belt (5) may have preferably capacity of 1.5 HP and the gear box ratio of 10:1. D) Thickness Adjustment Unit (9): The thickness of the sheet / slab formed can either be adjusted or maintained to the desired level by adjusting the 2nd gauging roller(8). This unit consists of a set of rollers, the bottom roller is fixed to the motor (6) and the top roller fixed on a screw mounted on the main frame (1). The gap between the top and bottom rollers is varied by manually rotating the screw through a hand wheel. The length of the 2nd gauging roller(8) may preferably be 310 mm and made of stainless steel 304-grade material of construction. E) Scrolling Unit (12): This unit consists of sharpened and hardened stainless steel 304 grade blades. The width of the cutting impression on the slab form can be varied by adjusting the gap between the scrolling disc in the scrolling unit (12). The scrolling unit (12) fixed to a motor (15) is used to maintain the cutting impression on the slab form irrespective of the type of chiki and allied products. The length of the scroller unit (12) preferably may be 230 mm and made of stainless steel 304-grade material of construction. F) Cross Cutter Unit (13) : This is a motorized unit, which can deliver product of different length based on motor speed. Variable frequency drive (24) fixed to motor (14) is used to vary speed of cross cutter unit (13) may have preferably capacity of 0.5 HP. The length of the holding roller (16) may preferably be 310 mm and cross cutter roller preferably be 230 mm and made of stainless steel 304 grade materials of construction. Method of Manufacturing : The present invention is provided with a method of manufacturing chiki, sweetmeat and other allied food products using the device as defined above wherein the hot material passes through a stainless steel feeding tray (2) to the 1st gauging roller (3) pressing the material in the form of sheet /slab, passes through the inclined Conveyor belt (5) to the thickness guiding unit (7) and 2n gauging roller (8) to get the sheet / slab of desired thickness, the conveyor belt (10) passes the sheet / slab to the scroller unit (12) to cut into the desired width, further cutting the sheet / slab with the help of motorized cross cutter (13) to get the desired length and finally collected on a product tray (17). After the selection of all parameters like temperature, thickness, drive speeds etc. the desired child can be produced in large volumes. The basic principle behind the method of manufacturing chiki, sweetmeat and other allied food products using the device as defined above is that the hot mass of the ingredients used for the manufacture of chiki, sweetmeat and other allied products like Jaggery / Sugar / liquid glucose with Nuts / oil seeds / cereals or those required for manufacturing other allied products is prepared in a batch cooker (18) and the mixture is passed with help of conveyor belts (5) & (10) through 1st guaging rollers (3), thickness guiding unit (7) & 2nd guaging roller (8) to get desired sheet / slab thickness. The temperature of sheet / slab at different sections can be monitored using a non contact hand held type temperature sensor (26) and the speed of the conveyor belts (5) & (10) can be suitably changed by using variable frequency drives. The different steps in the process of manufacturing chiki, sweetmeat and other allied food products are as follows: Working of the device: As a first step the basic materials required for manufacturing chiki or other desired products are mixed in the required proportions and heated preferably in a batch cooker (18). Sequential Operation: a. First, the chiki manufacturing device is thoroughly cleaned. Then the main power supply is switched on from the control panel (25). The speed of the Ist gauging roller (3), cross cutter (13), conveyor belt (5) & (10) are adjusted manually through the variable frequency drives in the control panel (25) and the thickness adjustment unit (9) is varied manually to get the desired thickness between 1 to 10 mm. b. The molten hot mixture prepared as described above is fed to the 1st gauging roller (3) through stainless steel feeding tray (2), fixed in an inclined position on main frame (1). c. The hot material is pressed by the 1st gauging roller (3) to form sheet / slab of thickness preferably between 10 to 12 mm in the case of chiki. d. The sheet / slab so formed is conveyed by the inclined conveyor (5) to 2nd gauging roller (8) through thickness guiding unit (7). e. The desired thickness of sheet / slab is achieved by manually adjusting the gap between the top and the bottom roller of the 2nd gauging roller (8) with the help of the mechanical screw provided in the thickness adjustment unit (9). f. Then, the sheet / slab is passed through a longitudinal scroller unit (12) to get the impressions for desired width for easily breaking the sheet / slab into pieces of desired shapes and sizes. g. The holding roller (16) guides the sheet / slab to the cross cutter (13), to get the impressions for desired length for easily breaking the sheet / slab into pieces of desired shapes and sizes. h. The final chiki, sweetmeat or other Hied food products of desired length and width are collected in the product tray (17). Advantages of the device of the present invention: • Good quality chiki, sweetmeat or other allied food products with uniform consistency, taste, size, volume and desired appearance can be manufactured. • The device facilitates manufacturing the desired products without physically handling, in a completely mechanized operation and in large quantities under hygienic conditions employing good manufacturing practices • The device and method of using the device to manufacture the products is simple to operate and no trained and / or skilled personnel are required. • The device and the method can be employed for manufacturing variety of chiki, sweetmeat and other allied food products. We Claim 1. A device for manufacturing of chiki, sweetmeat and other allied traditional ethnic Indian food products, which comprises a batch cooker (18) and a main frame (1) provided with a stainless steel feeding tray (2) for holding the hot materials which are used for manufacturing of said products, a first gauging roller (3) for converting the hot material into a sheet / slab form, driven by motor (4), the motor (4) being fixed to the main frame (1), an inclined conveyor belt (5) driven by motor (6) which is also fixed to the main frame (1) said belt (5) carrying the sheet / slab formed to the guiding unit (7) which is fixed above the conveyor belt (5) for maintaining uniform thickness, a second gauging roller (8) attached to motor (6) for final adjustment of the thickness of sheet / slab as per settings in the thickness adjustment unit (9) fixed on the second gauging roller (8), the gauging roller (8) provided with mechanical screw for adjusting the thickness of the sheet / slab, a second conveyor belt (10) driven by motor (11) for carrying the sheet / slab formed to the longitudinal scrolling unit (12) driven by motor (15) for making cutting impression on the sheet / slab to the desired width, the holding roller (16) used for gripping and feeding the sheet / slab to the cross cutter (13) driven by motor (14) for cutting the sheet / slab at the desired length which is finally collected on a product tray (1'7), The/motors (4,6,11,14,15) powered by Control Panel (25) connected with Three Phase Powersupply. 2. A device as claimed in claim 1 provided with a stirrer (20) and a temperature controller (19) to control the temperature of the hot material produced in the batch cooker (18). 3. A device as claimed in any one of the claims 1 to 2 wherein the motors (4), (6), (11) and (14) are controllable by variable frequency drives. 4. A device as claimed in any one of claims 1 to 3 wherein the Thickness Guiding Unit (7) is made of stainless steel and provided with Nylon sleeves. 5. A device as claimed in any one of the claims 1 to 4 wherein the motors (4), (6), (11) & (14) are of 1.5 horsepower capacity with a gear ratio of 10:1. 6. A device as claimed in any one of the claims 1 to 5 wherein the length of the first gauging roller (3) and second gauging roller (8) is 310 mm. 7. A device as claimed in any one of the claims 1 to 6 wherein the Conveyor Belts (5) & (10) are made of food grade PVC and are washable with water. 8. A device as claimed in any one of the claims 1 to 7 wherein the Thickness Adjustment Unit (9) is provided with gauging rollers (8) out of which the bottom roller is fixed to the motor (6) and the top roller on a screw mounted on the main frame (1), the gap between the top and bottom rollers is varied by manually rotating the screw position through the hand wheel. 9. A device as claimed in any one of the claims 1 to 8 wherein the longitudinal scrolling unit (12) consists of sharpened and hardened stainless steel 304 grade blades. 10. A method of making chiki, sweetmeat and other allied food products using the device as claimed in claims 1 to 9 wherein the hot material passes through a stainless steel feeding tray (2) to the first guaging roller (3) pressing the material in the form of sheet/slab, which passes through the inclined Conveyor Belt (5) to the thickness guiding unit (7) and second gauging roller (8) to get the sheet / slab of desired thickness, a second conveyor belt (10) carrying the sheet/slab to the longitudinal scrolling unit (12) making cutting impression on the sheet/slab to get desired width and further cutting the sheet / slab with the help of motorized cross cutter (13) to get the desired length and finally collected on the product tray (17). 11. A device for manufacturing chiki, sweetmeat and other traditional ethnic Indian food products substantially as herein described and illustrated in figures 1 to 4 of the accompanying drawings.
