Abstract | The invention relates to edible water soluble packaging films incorporated with precise quantities of essential food ingredients such as spices, salt, sugar and the like. Other ingredients such as flavours, colours can also be incorporated into the said film. Said edible water soluble films can be used for packaging certain cooked or semi cooked food items so that when the packaged food is put in water along with the edible film, the edible film will dissolve and will deliver the food ingredients incorporated into the edible film and hence will help in easing the process of instant cooking and will retain the flavour, taste, etc of the original recipe. |
Full Text | FORM 2 THE PATENTS ACT, 1970 (39 of 1970) As amended by the Patents (Amendment) Act, 2005 & The Patents Rules, 2003 As amended by the Patents (Amendment) Rules, 2005 PROVISIONAL SPECIFICATION (See section 10 and rule 13) TITLE OF THE INVENTION Edible water soluble packaging film and package made out of the said film APPLICANTS Name : Arrow Coated Products Limited Nationality : Indian Company Address : 5D Laxmi Industrial Estate, New Link Road, Andheri West, Mumbai 400053, Maharashtra, India PREAMBLE TO THE DESCRIPTION The following specification particularly describes the nature of this invention and the manner in which it is to be performed: 1 The invention relates to an edible water soluble film package wherein precise quantities of one or more food ingredients or semi-cooked or cooked food are packed and this package can be put directly into water during the cooking process. The edible WSF package will dissolve and thus will deliver the necessary ingredients in water as well as form part of the final recipe. Further, some ingredients such as some spices, flavours, perfumes, colours, etc can be embedded within the edible WSF itself and a package made out of it and can deliver the precise aroma or spice properties to the final cooked product. Background of Invention: Many types of edible packaging film are there, but the drawback of these films is they dissolve fast in hot water but take a long time while dissolving in cold water. Hence, these films are not useful for packing food stuffs such as flavoured powders/syrups used for preparing flavoured drinks/sherbats, such as orange flavoured powder for orange flavoured drink/sherbat, as these powders are supposed to be dissolved in ice cold water. Also, there are no edible packagings wherein the food flavours or spices are present in the edible film itself, so that when the food ingredients are packed in a film contained with spices and flavours suitable for a particular dish and then they are dissolved in water, during cooking, they will deliver the precise aroma or spice properties to the final cooked dish. The patent no. CN1473741 describes a seasoning packing packet for instant food, and aims at eliminating the trouble of opening the packet and avoiding relevant environmental pollution. The films produced via the technological process similar to that of making glutinous rice film, and the packing packet is less damaged, easy to dissolve in hot water and non-toxic. The patent does not describe an edible film embedded with active ingredients and limits to a hot water soluble film. 2 Also, liquid food stuffs such as sauces, curries, pastes, chutneys, pickles and the like could not be packed in the edible films due to leakage problems. The present invention provides a method of packing these liquid foodstuffs in a water soluble film. Object of Invention: Hence, the main object of the present invention is to provide an edible water soluble film package for packing precise quantities of one or more food ingredients or semi cooked or cooked food which can be put directly into water without any need for opening the package. Another object of the present invention is to provide an edible water soluble film which will be easily soluble in water. Yet another object of the present invention is to provide an edible water soluble film embedded with various food ingredients such as food flavours, perfumes, spices, etc, which can be used for packing food items and will deliver the precise aroma or spice properties to the final cooked product. Yet another object of the present invention is to provide an edible water soluble film which is coated with one or more layers of flavours, spices and the like. Yet another object of the present invention is to provide a heat sealable edible coating on the edible water soluble film to increase the sealing properties of the film. Yet another object of the present invention is to provide a process for manufacturing an edible water soluble film, optionally embedded with food ingredients like food flavours, perfumes, spices, etc. Yet another object of the present invention is to provide the method of packaging one or more food ingredients into the edible water soluble film. 3 Summary of invention: According to one aspect, the present invention provides an edible water soluble film package for packing precise quantities of one or more food ingredients or semi-cooked or cooked food. The packaged food or food ingredients are put directly into water while final cooking. The edible water soluble film will easily get dissolved in the water and thus deliver the ingredients. Also, there will be no need of opening a packet and adding required amount of the packaged ingredient. Here, pre-measured quantities of ingredients required for cooking a particular food dish for particular number of people will be packed in the edible water soluble film. The edible water soluble film can be manufactured from edible raw materials selected from polyethyleneglycol, polyvinylpyrrolidone, proteinaceous binders such as gelatin, modified gelatins such as phthaloyl gelatin, polysaccharides such as starch, gum Arabic, pullulan and dextrin and water-soluble cellulose derivatives such as methyl cellulose, hydroxy propyl cellulose, hydroxy propyl methyl cellulose, hydroxy propyl ethyl cellulose, hydroxy ethyl cellulose, carboxy methyl cellulose either alone or combinations thereof. The edible water soluble film can be a cold water soluble film or a hot water soluble film depending upon the final application. Edible water soluble film may consist of 1 to 15% of polyvinyl alcohol. As per FDA standards, upto 15% of polyvinyl alcohol is allowed to be used for edible stuffs. Further, the edible water soluble film is either manufactured by a cast process or an extrusion process as per requirement. All types of food ingredients such as readymade powders, spices, cut vegetables, oil or semi-cooked or cooked food can be packed into the said edible water soluble film package. 4 According to another aspect, the present invention provides an edible water soluble film embedded with various flavours or perfumes or spices to deliver the precise aroma or spice properties to the final cooked product. Embedding of flavours, perfumes, spices, etc. can be done by following methods: 1. directly mixing the ingredients in the edible water soluble film batch formulation and then casting on a liner or conveyor, 2. sprinkling the powdered spices on a semi formed edible water soluble film and the preferably layering the sprinkled side of WSF with another WSF, 3. entrapping ingredients in between two edible water soluble films, 4. embedding of flavours or perfumes can also be done by applying an edible binder coating mixed with flavours or perfumes, on a preformed edible water soluble film on a liner and then laminating the binder coated side of the edible WSF to another layer of preformed edible WSF. The above processes are briefly described in the description. According to yet another aspect, the present invention provides an edible water soluble film with an edible heat sealable coating to improve the sealing properties of the film and also the make the film substantially pinhole free. The heat sealable coating can be selected from polyvinyl pyrrolidone (PVP), PVA and the like. According to yet another aspect, the present invention provides an edible water soluble film package for filling food ingredients and other semi-cooked or cooked food stuffs. The package can be formed by heat sealing processes or by a thermoforming process. Further, the package can have various shapes and sizes as per requirement. Description: As per one of the aspects of the invention, an edible water soluble film embedded with food ingredients formed by a batch mix method consist the following steps: 1. batch Mixing of the formulation of edible WSF and the ingredient to be embedded; 5 2. casting of WSF with or without the active materials to be embedded at primary casting head; 3. metering of the cast film at casting head. As per another aspect of the invention, an edible water soluble film embedded with food ingredients formed by a spraying method consist the following steps: 1. casting of WSF with or without ingredients to be embedded at primary casting head; 2. dispersing of the ingredients to be embedded by primary sprayer; 3. smoothening of the film with or without the embedded ingredients at the primary station; 4. drying of the edible WSF; 5. optional spraying of ingredients to be embedded using a secondary sprayer; 6. smoothening of the film at the secondary station; 7. drying of the edible WSF; 8. casting of edible WSF with or without the ingredients to be embedded at secondary casting head. As per yet another aspect of the invention, an edible water soluble film embedded with food ingredients formed by an online entrapment method consist the following steps: 1. casting of WSF with or without ingredients to be embedded at primary casting head; 2. unwinding of a preformed edible WSF from the unwinder with or without liner; 3. entrapping of the ingredients dispensed by the disperser (48) in between two affixing guide rollers; 4. guiding the multi-layered WSF of the above step 3 through hot / chill cylinder for rewinding or splitting. The above methods are carried out either on a casting conveyor or on a casting liner and one or more of these methods can be combined together to form a multi-layered edible water soluble film with one or more food ingredients embedded within it. 6 J As per yet another aspect of the invention, an edible water soluble film embedded with food ingredients formed by an offline vertical or horizontal entrapment method consist the following steps: 1. unwinding of the preformed edible WSF films from two unwinders; 2. entrapping of the ingredients dispensed by the disperser in between two affixing guide rollers; 3. affixing of the edible WSF films of the above step 2 at the affixing rollers; 4. rewinding in roll form or sheet form or fan-fold form. Optionally the film can be with or without casting liners. The casting liners can be stripped immediately or after aging period of around 1 to around 720 hrs. As per yet another aspect of the invention, an edible water soluble film embedded with food ingredients formed by another entrapment method consist the following steps: 1. providing a first preformed edible WSF with detachable liner; 2. providing a second preformed edible WSF with or without a detachable liner; 3. applying a binder coat mixed with food ingredients such as flavours, over the said WSF with liner; 4. semi-drying the binder coat; 5. combining the second preformed edible WSF with the first edible WSF of the step (4) by passing through a nip roll and forming a laminated double layered combined edible WSF; 6. passing the double layered edible WSF through heated rolls for dissipating the entrapped moisture; 7. storing the edible WSF laminate for internal ageing; and 8. detaching the liner and rewinding WSF laminate. The binder coat in the above process can be selected from PVP or edible WSF formulation itself, etc. The said binder coat is preferably applied by using a wire bound mayer bar. 7 As per yet another aspect of the invention, an edible water soluble film with/without embedded food ingredients coated with a heat sealable coating consist the following steps: 1. providing a first preformed edible WSF with detachable liner; 2. coating of a heat sealable coat on the edible WSF side; 3. drying the coating and rewinding the film. The preformed WSF may be cold water soluble or hot water soluble depending upon the requirement. The heat sealable coating may be selected from PVP, edible hot water soluble batch formulation, edible cold water soluble batch formulation and the like.
