Full Text | 2 FIELD OF INVENTION The invention relates to a process for preservation of boiled freeze dried cereals. BACKGROUND OF INVENTION Reference is made herein to chick peas as by way of example. Chick peas are first soaked in water, boiled and freeze, dried. A disadvantage associated with such a process is that after storage for a certain period, the chick peas become rancid. Such a rancification is due to the reason that the pores of the chick peas are exposed and subjected to atmospheric oxidation. It is known that cereals contain oil. Thus, by subjecting the cereal to the aforesaid steps, the oil is exposed to atmospheric oxidation which is responsible for rancification. OBJECTS OF THE INVENTION An object is this invention is to propose a process for preservation of boiled freeze dried cereals. Another object of the invention is to propose a process for preservation of boiled freeze dried cereals which substantially avoid rancification. 3 Still another invention is to propose a process for preservation of boiled freeze dried cereals which is efficient. Further objects and advantages of this invention will be more apparent from the ensuing description. At the outset of the description that follows, it is to be understood that the ensuing description only illustrates a particular form of this invention. However, such a particular form is only an exemplary embodiment and is not intended to be taken restrictively to imply any limitation on the scope of the present invention. BRIEF DESCRIPTION OF INVENTION According to this invention there is provided a process for the preservation of boiled freeze dried cereals which comprises in the steps of soaking the cereals, boiling, freeze drying the cereal characterized in the steps of applying a barrier layer to the exposed surface of the cereal and thereby closing the pores. The cereals are soaked in water, boiled, freeze dried in a manner known in the art. Specifically, in accordance with this invention, a barrier layer is applied to exposed surface of the cereals, such a barrier layer can comprise a coating or film of edible oil such as groundnut oil. 4 For this purpose, the cereal and edible oil are mixed thoroughly in a mixer. By applying such a barrier layer, the pores are closed and barrier layer no longer allows the surface to be exposed to atmospheric oxidation. By way pf example oil is added to the extent of 2 to 20% by dry weight of peas. If we add less than 2% by weight, a suitable layer is not formed on the surface of the cereal. If we add more that 20 %, then no additional beneficial results are achieved.
