Abstract	The present invention relates to a method of producing monatin, comprising converting tryptophan to monatin, wherein the method comprises: contacting tryptophan with a first polypeptide, wherein when tryptophan is ifgi1 contacted with the first polypeptide, the first polypeptide is chosen from an 81 aminotransferase, a drogenase, or an oxidase, wherein the first polypeptide converts the tryptophan to indole-3-pyruvate; contacting the indole-3-pyruvate with a second polypeptide and a C3 carbon source, wherein the second polypeptide is an aldolase, wherein the second polypeptide converts the indole-3-pyruvate and the C3 carbon source to 2-hydroxy 2- (indol-3ylmethyl) -4-keto glutaric acid; and contacting the 2-hydroxy 2- (indol-3ylmethyl)-4-keto glutaric acid with a third polypeptide, wherein the third polypeptide is an aminotransferase or a dehydrogenase wherein the third polypeptide converts the 2-hydroxy 2- (indol-3ylmethyl)-4-keto monatin.
